Andrew Johnson hailed from North Carolina and loved his southern cuisine, but his favorites were Hoppin' John, which is a mixture of peppers, tomatoes, rice, and black-eyed peas, with sometimes salt pork pieces or beef, which made the dish into a mini stew.
Another of his favorite dishes would be anything Sweet Potatoes. Whether it be baked sweet potatoes smothered with butter, or homefries, chips, fries or roasted sweet potatoes. He loved them no matter the way they were cooked.
